The meringue in this recipe is indistinguishable from non-vegan meringue and comes from an unexpected source! Sean has been experimenting with it in meringue cookies and other treats all week, and he has finally brought his prodigious skills to bear on an honest-to-goodness lemon meringue pie cobbled together from various recipes. Here's the aggregate:

Pie Crust

  • 1 1⁄2 cups all-purpose flour
  • 1⁄2 teaspoon salt
  • 2 tablespoons organic sugar
  • 1⁄2 cup oil
  • 2 tablespoons orange juice or non-dairy milk

Preheat oven to 425F.

In a large bowl, place all of the dry ingredients. Add the orange juice or non-dairy milk and oil. Mix with a fork. Pat into a 9-inch pie pan with fingertips. Bake for 10-12 minutes.

I just made this up, and it's gorgeous.

Ingredients
2 Bananas (frozen, if possible)
1 C. Silk Coconut Milk
1 oz. Kraken Rum
1 oz. Trader Vic's Macadamia Nut Liqueur
Ice (if your bananas aren't frozen)

Directions
Blend until smooth.

The birthday cake and frosting went over so well last night that I thought I'd post the recipe here. That way you can make it, and I'll remember it!

Vegan Chocolate Cake

Ingredients

2 1/2 C. All-Purpose Flour
2 C. Sugar
2/3 C. Cocoa Powder
2 Tsp. Baking Soda
1 Tsp. Salt
2 C. Warm Water
2 Tsp. Vanilla Extract
2/3 C. Extra Virgin Olive Oil (Our Vegetable Oil of Choice in the House)
2 Tsp. Apple Cider Vinegar (White Vinegar Will Work As Well)

Gluten-Free Substitutions

Replace 2 1/2 C. All-Purpose Flour with 2 1/2 C. Gluten-Free All-Purpose Flour Mix
Add 1 Tbsp. Ground Chia or Flax Seed

I think I finally have our family recipe down to a science for this hugely delicious and nutritious hot beverage, so I thought I'd share it. I use a Vitamix to both blend and heat it, but you could easily substitute that for a saucepan and whisk, though you'd have to figure out your powdered ginger proportions in that case.

Ingredients

2 Cups Almond Milk
1 TBSP Agave Nectar
1 TSP Turmeric
1/2 TSP Cinnamon
1/8 TSP Cardamom
Thumbnail-Sized Chunk of Fresh Ginger
Pinch of Black Pepper

Directions

Toss everything into the Vitamix and blend on high until it's hot. Easy-peasey.

Ingredients

  • A crock pot full of apples, cored
  • 2-4 tsp. cinnamon, to taste
  • 2-4 tsp. nutmeg, to taste
  • 3-4 cups sugar, to taste

Instructions

  • Core the apples.
  • Add spices and sugar.
  • Put mix in crock pot.
  • Cook on high for 1 hour.
  • Cook on low for 9-11 hours.
  • Remove lid and cook for 1 more hour.
  • Blend mix with an immersion blender until desired smoothness is achieved.
  • Try not to eat it all at once!
